Red Chilli Garlic Chutney

Keep 20 dry chilies soaked In 1/2 cup of boiling hot water for 30 minutes.

In 2 tbsp hot Oil add 1/2 tsp Cumin & Coriander seeds each.Let crackle on low seconds.

Add 1 Onion roughly chopped, 20 Garlic cloves &1 inch Ginger.

Strain out soaked chillies & add them to sauted Onions

Continue sauteing 2-3 minutes more adding Salt to taste & a small ball of Tamarind.

Then cool & make Chutney adding reserved Water.

In 1tbsp hot Oil add 1/4 tsp Asafoetida,1/2 tsp Cumin,1/2 tsp Black mustard seeds,1/2 tsp Nigella and handful of curry leaves.

Drop grinded Chutney paste and cook 1-2 minutes.

Add 1 cup water to adjust consistency.

Cook till garlic Chilli chutney splatters.

Cool and store.
