Mix 2 cups wheat flour, 2 tbsp gram flour, incorporate 4 tbsp warm oil, 1 tbsp melted clarified butter.
Then add 1 tbsp dry fenugreek, 1 tsp dry pomegranate, 1 tsp chili paste, 1 tbsp fresh coriander, 1 big onion, 1 tsp carom seeds, 1 tsp cumin seeds, 1/2 tsp salt and 1/2 tsp pepper.
Gradually add water to bring the flour together, avoiding kneading. Apply a tablespoon of warm oil to the mixture.
Split the dough into four portions and roll each into a thick roti.
You can use a spoon to make indents in the roti.
Heat a griddle and apply ghee on both sides of the roti.
Roast the roti over low to medium heat, pressing it with a spatula for crispness, till golden brown .
Serve the hot Koki with a cup of tea.
