Cut Bitter gourd into pieces not too thick or thin.

Boil about 1 litre of Water with 1 tsp Salt & 1 tsp Vinegar.

Put off,keep Bitter gourd pieces immersed in Water for 5 minutes

Strain out,then add 2 tsp Gram flour, 1/2 tsp Turmeric,1/2 tsp Chilli & 1 tsp Salt.

Mix and let it sit for 30 minutes to an hour.

In 2-3 tbsp smoked Mustard oil add Bitter gourd pieces with 1 tsp more Gram flour.

Strain out when pieces turn golden brown.

In 1 tbsp hot Oil add 1 tsp Cumin.Let it crackle.

Next drop 1 tsp Garlic paste & Ginger paste each.

Sauté Onions till they turn golden.

Add Tomato puree of 3 Tomatoes.

After sauting puree add 1/2 tsp Turmeric,1 tsp k.red Chilli,1 tsp Coriander,1/4 tsp Cinnamon,1/4 tsp green Cardamom,1/2 tsp Garam Masala,Salt & 2-3 slit green Chillies.

Saute Tomato then add 1/2 cup curd.

Cook 2 min & then add 3 cup Water & fried Bitter gourd pieces.

Cook till soft.

Add hand-crushed 1 tsp Dry Fenugreek leaves.

Give a boil for 1 minute and Shahi Masala Karela Sabzi is ready.
