Mix2 cup refined flour, 1/2 tsp salt & carom seeds, and 4 tbsp oil. Add water gradually to form a soft dough. Let it rest for 15 minutes.
Grind 1 tsp each fennel, cumin, fenugreek, and coriander seeds. Roast the ground spices in 2 tbsp Oil.
Add 1/4 tsp Asafoetid, 1 tsp each ginger paste, Mango powder, and Red chilli powder.Also 1/2 tsp each chili paste, Black salt, Garam masala and 2 tbsp Gram flour roast until fragrant.
Sauté 1 onions, add 3 mashed boiled potato, 1 tsp sugar. Mix until well combined.
Divide the dough and filling into equal portions.
Flatten the dough balls and place a portion of stuffing in the center, sealing it securely.
Shape the stuffed dough into domes.
Fry in hot oil over high heat briefly, then refry over low heat until golden and crisp.
Repeat frying on both sides until uniformly golden brown.
Serve hot with tangy tamarind chutney.Enjoy the crispy and flavorful pyaz kachori!
