Begin by preparing the potatoes, peeling, washing, and cutting 250 gm Potatoes into French fry shapes.
Rinse the cut potatoes thoroughly to remove excess starch.
Boil the potatoes in salted water until they are partially cooked, about 60% done.
Strain the partially cooked potatoes and transfer them to a mixing bowl.
Add 1 tsp each ginger-garlic paste, salt, 1/2 tsp pepper, 1/2 cup rice flour, and 1/4 cup refined flour to the potatoes, forming a thick paste-like coating.
Fry the coated potato pieces in batches until they turn yellow, then refry them until golden brown.
In a separate pan, heat 2 tbsp oil and sauté thinly sliced 1 onion, chopped 1 tbsp garlic, 1/2 capsicum, 2-3 slit green chilies, salt, and sesame seeds until the onions start changing color.
Lower the heat, add 1 tsp Kashmiri red chili powder, and then quickly pour in water.
Stir in 2 tsp soy sauce, 1 tbsp tomato ketchup, and a slurry of 1 tsp corn flour to thicken the gravy.
Once the gravy comes to a boil, add honey and the fried potatoes, mixing gently before serving and sprinkling with roasted sesame seeds.
