Roganjosh is a very famous and popular meat preparation from the Kashmiri valley but we will replicate it here with a vegetable which quiet represents meat in its texture, you have guessed it right it’s Jackfruit aka Kathal.Traditionally Roganjosh is not made using Onion & Garlic but modern chefs do prefer to add these days to make it more flavourful along with the other spices that are to be added.Here we will make Kathal roganjosh without Onion & Garlic which turns out to be perfect.

Ingredients:-

  • 750 gm raw Jackfruit  / Kathal
  • Salt to taste
  • 2 tsp Kashmiri red chilli powder
  • 1/4 tsp Turmeric / Haldi
  • 3 tbsp Curd / Dahi
  • 1/2 tsp Dry Ginger powder / Saunth
  • 1 tsp Fennel seed powder / Saunf
  • 5 tbsp Mustard Oil / Sarso tel
  • 2 Bayleaves / Tej patta
  • 1 Big Black cardamom / Badi elachi
  • 3 Cloves / Loung
  • A pinch Asafoetida / Hing
  • 1/2 tsp Cumin / Zeera
  • 1/4 tsp green cardamom powder / Hari elachi
  • 1/2 tsp Garam masala

Method:-

  1. Cut rinse and dry Jackfruit pieces and then deep fry them in hot smoked out Mustard Oil over medium-high till golden brown.
  2. Strain out and keep aside in a bowl
  3. In the left out Oil keeping over low add Asafoetida,Bayleaves,crushed black Cardamom,Cloves and Cumin seeds.
  4. Let the Cumin and whole spices crackle in Oil few seconds,5hen put off the stove.
  5. Now add Kashmiri red chilli powder.Within 2-4 seconds of adding Chilli powder add Curd.Mix
  6. Again put on the stove keeping over low-medium add in Ginger powder,Fennel powder,Cumin powder and Turmeric .
  7. Cook spices stirring till it starts boiling and let it boil for 2-4 seconds.
  8. Next add 4-5 cups of Water,Salt,Cinnamon powder, green Cardamom powder and fried Jackfruit pieces.
  9. Giving a lite stir let the gravy come to boil and then put on the lid.
  10. Cook over low-medium for 15-20 minutes or until Jackfruit pieces get tender.
  11. At last sprinkle some Garam masala and serve hot with rice or Naan.

Tips :-

  • Before cutting raw jackfruit apply mustard oil on the knife,your palms and the jackfruit to avoid sticky liquid.
  • For better result choose soft baby Jackfruit to cook.
  • You can even enjoy fried Jackfruit with little Salt and Chilli powder.
