Aloo Pakora is a famous street food usually made at any corner of the city and served with green Chutney. Let’s make it at home in a hygienic way.

Ingredients:-

  • 3 Medium Potatoes / Aloo
  • Salt to taste / Namak swad anusar
  • 1 cup Gram flour / Besan
  • 1/2 cup Water / Pani
  • 1 tbsp Rice flour / Chawal atta
  • 1 tsp Coriander paste or Chutney or 1 tbsp chopped fresh Coriander / Dhaniya
  • 1/2 tsp Red Chilli powder / Lal mirch
  • 1/4 tsp Turmeric / Haldi
  • 1/2 Carom seeds / Ajwain
  • 1 pinch Asafoetida / Hing
  • 1 pinch Baking soda
  • Oil for frying
  • Some chaat masala to sprinkle ( Optional )

Method:-

  • Wash and peel the potatoes, cut into thin slices using a mandoline or a sharp knife.
  • Rinse the potato slices 1 to 2 times to take out starch,with clean water and then keep them aside dry.
  • Now in a bowl add gram flour, salt, carom seeds, turmeric powder, chilli powder, baking soda, asafoetida, coriander Chutney and rice flour. Mix all the ingredients together.
  • Gradually adding water make a batter which is neither too thick nor too thin.
  • Now taking each slice of potato coated with the made batter then drop it in the hot oil to fry.
  • Fry these in batches over a medium heat till crispy golden. Strain out over a paper towel.
  • Serve hot with green coriander that is the Dhaniya Chutney.

Tips :-

  • To make the batter initially add little water make a paste breaking all the lumps and then gradually add whole of the water.
