Spicy Masala Crispy Boondis

Several chaat and raita are made using spicy masala boondi,that are though easy to make but you need to keep some points in mind while making to get perfect round crispy Haldiram style boondis.

Ingredients :- 

  • 1 cup Gram flour / Besan
  • 1/4 tsp Salt
  • 1/4 tsp Red chilli powder
  • 1/2 cup +1 tsp Water
  • 1/4 tsp Black salt / Kala namak
  • Oil for frying

Method:-

  1. Add Salt and Red chilli powder to Gram flour.
  2. Then make a batter of pouring consistency using Water.The batter should be neither too thick nor too thin.
  3. Take 1-2 tbsp of batter and drop it over a perforated ladle or jhara in the hot Oil.
  4. Fry on low to medium till Boondis turn golden brown & crispy.
  5. Take out and strain excess Oil over a sieve then drop boondis over a paper towel.
  6. Sprinkle Black salt when still hot.
  7. Cool and store airtight.

Tips :-

  • Don’t move your ladle up and down to drop the batter otherwise your Boondis will form a tail.
  • Clean you ladle after every batch of dropping Boondis in hot Oil.
  • If batter is too thick your Boondis will turn soft with a tail.
  • If batter is too thin Boondis will turn flat.
