Gujiya is one of the best sweet made and served usually during festivals like Holi or Dewali.You can either make or serve it with or without dipped in sugar syrup
Ingredients:- ( Serve 18 )
DOUGH
- 2 cup Refined flour / Maida
- A pinch Salt / Namak
- 5 tbsp Butter / Ghee
- 3/4 cup Water / Pani
- 1/4 tsp Green Cardamom / Hari Elachi
STUFFING
- 150 gm Mawa / Khoya
- 1 tsp Butter / Ghee
- 1/4 cup powdered Almond / Badam
- 1/4 cup powdered Cashew / Kaju
- 1/4 cup powdered dry Dates / Sukha Khajoor
- 1 cup desiccated Coconut powder / Nariyal
- 1/2 tsp Green Cardamom / Hari Elachi
- 1/4 cup Raisin / Kishmish
SUGAR SYRUP
- 1 cup Sugar / Chini
- 3/4 cup Water / Pani
1 tbsp PISTACHIO / PISTA
GHEE FOR FRYING
Method :-
- In a heavy bottom vessel adding Ghee roast Coconut continuously stirring till it starts changing colour.
- Then add all the other ingredients and continue roasting till aromatic.
- Now mix in Mawa.our stuffing is ready.
- Next in flour add Ghee and other remaining ingredients.Mix till flaky and then adding Water make a stiff dough.
- Keep the dough covered for 15-20 minutes.
- Meanwhile to make sugar syrup / Chashni, melt sugar at a low and then keep on boiling till it gets sticky.
- Roll out dough in small rotis .
- Place the made stuffing upon it and then fold to close,applying little water over the edges to completely seal it.
- Pressing the edges make it little thinner .Make some kind of design over the edges with hand or a fork.
- Fry in mildly hot Oil or Ghee till golden brown.
- Immediately after straining out after frying drop in warm Sugar syrup.
- Strain out from Sugar syrup within 5 minutes and before serving decorate with thinly sliced Pistachios.
Tips :-
- Avoid over roasting the dry fruit mix.
- If you are using homemade Mawa you can directly add it in the dry fruit mix but if you are using store bought Mawa roast it over low until it changes colour,comes together as a dough and gets soft.
- To check stickiness of sugar syrup cool a drop of Sugar syrup.Then test between your finger and thumb.
- You can keep Mawa dry fruit Gujiya for 15 days in fridge.
