Sindhi kadhi or you can call it mixed vegetables kadhi is an Indian curry made with seasonal vegetables cooked in Besan.Its a Sindhi speciality and any one will love it specially if you are a Kadhi chawal lover.

Ingredients:-

* 5 tbsp Gram flour / Besan
* 1/2 cup Lady finger / Bhindi or Drumstick
* 1/2 cup Potatoes / Aloo
* 1/2 cup Carrot / Gajjar
* 1/2 cup Eggplant / Baighan
* 1 tbsp Tamarind / Imli
* 2-3 Green chillies
* 1/2 tsp Fenugreek seeds / Mathi
* 1/2 tsp Turmeric / Haldi
* 3-4 Cloves / Loung
* 1 tbsp Curry leaves
* 1/2 tsp Cumin / Zeera
* 1/2 tsp Mustard seeds / Rai
* A pinch Asafoetida / Hing
* 2 tbsp Oil and
* Oil for frying
* Salt to taste

Method:-

1. In hot Oil fry all the vegetables for about 8-10 min on medium.
2. Then strain them out.
3. No heat 2 tablespoons of Oil and drop in it Fenugreek seeds,Mustard seeds,Cumin seeds & Asafoetida.
4. Keeping on low let the seeds to crackle for few seconds and then add Cloves,Chillies,Curry leaves and Gram flour.
5. Roux the Gram flour for about 3-4 min on low and then add 2 cups of Water.Mix and there should be no lumps.
6. Then add Turmeric,Salt,Tamarind juice fried vegetables and one more cup of Water.
7. Let this now come to a boil on medium and then within just couple of boils put off the stove.

Tips:-

– To make Tamarind juice soak Tamarind in hot water for about 15-20 min then squeeze and strain out the juice.
– Over cooking or over boiling might make the Kadhi too thick.
