Though pickles are not usually taken in winter but just made and stored during this time period but this is one type of pickle that you can have during winters because it will not only makes you feel warm but also boost your immune system as it’s got Turmeric and Ginger as it’s main ingredients.

TURMERIC GINGER CHILLI PICKLE

Ingredients  :-

  • 250 gm Fresh raw Turmeric / Haldi
  • 50 gm Fresh Ginger / Adrakh
  • 3/4 cup Mustard Oil / Sarso tel
  • 1 tsp Asafoetida / Hing
  • 8-10 green Chillies / Hari mirch
  • 1 tsp Cumin / Zeera
  • 1 tsp Fennel seeds / Saunf
  • 1/4 tsp Ginger powder / Saunth
  • 1+1/2 tsp Salt / Namak
  • 1 tbsp Kashmiri red chilli powder / Lal mirch powder
  • 1/2 cup Lemon juice / Nimbu raas

ROASTED SPICES ( Used 2+1/2 tsp roasted spices mix )

  • 2 tbsp Fennel seeds / Saunf
  • 1 tbsp Cumin / Zeera
  • 1/2 tsp Fenugreek seeds / Mathe dana
  • 1 tbsp Yellow Mustard / Peeli sarso

Method:-

  1. Scrape out skin from raw Turmeric and Ginger.
  2. Cut both Turmeric and Ginger to julienne.
  3. Spread over a big plate or tray and let it Sun dry for 1-2 day or keep in fridge to dry for 4-5 days.
  4. Dry roast spices-Fennel seed,Cumin,Fenugreek seed and yellow Mustard on low for just a minute.
  5. Completely cool and grind into powder.
  6. Heat mustard oil till smoky hot and then add to it Asafoetida,slit green Chillies,Cumin,Fennel seeds,dry Ginger powder,Salt,Red Chilli powder and dried Turmeric with dried Ginger keeping heat over a low.
  7. Mix and within 30-60 seconds switch off the stove.Adding 2+1/2 teaspoon of ground spices and lemon juice.Again give a mix.
  8. After cools down fill in sterilised glass bottle.
  9. Keep in Sun 5-7 days or keep in a warm place of your kitchen like near the stove.
  10. Turmeric Ginger Chilli Pickle is ready Enjoy!

Tips :-

  • Put on gloves to avoid hands getting stained with Turmeric.
  • You can even make a instant pickle without drying but drying increases the shelf life of pickle.
  • Don’t over heat spices,you should be comfortable to touch as if they are Sun dry.
  • Instead of Lemon juice you can even add vinegar ( It will make pickle more sour )
