A perfect Omelette for vegetarians with added veggies.

Ingredients :- ( Serves 8 )

BATTER

  • 1+1/2 cup Gram flour / Besan
  • 2 tbsp Refined flour / Maida
  • 1/4 tsp Salt or to taste
  • 2 cups Water
  • Oil for cooking Chilla
  • Cheese

VEG MIX

  • 1 tbsp Oil
  • 1/2 tsp Nigella / Kalonji
  • 1/2 tsp Cumin / Zeera
  • 1 cup thinly sliced Onion
  • 1/2 cup chopped Carrot
  • 1/2 cup Peas
  • 1/2 tsp Salt or as per taste
  • 1/2 tsp Chilli paste
  • 2 Tomatoes

Method:-

  1. In hot Oil add Cumin & Nigella.let it to crackle over low for few seconds.
  2. Add Onions,sauté over medium till translucent.
  3. Add Carrot,Peas,Salt and Chilli paste.
  4. Continue sauting till the veggies settle down a bit and then add finely chopped Tomatoes.
  5. Cook over high till tomorrow turn a bit tender.It will take hardly 4-5 minutes to make this vegetable mix.
  6. Now make a thin batter with Besan,Maida and Salt adding Water.
  7. Add the made vegetable mix.
  8. Drop couple of teaspoons of made batter over a hor Griddle / Tawa.Spread it.
  9. Cook on low to medium adding a teaspoon of Oil.
  10. When chill starts leaving sides and is cooked beneath sprinkle couple of teaspoons of shredded cheese on top fold and remove.
  11. Serve hot with green chutney or sauce.

Tips :-

  • Give Peas a pulse in mixer grinder before adding.
  • You can keep this vegetable mix stored in refrigerator for a week & use when required to make Chilla.
