Here Gajar Ka halwa has been made in a very different easy way without shredding in a pressure cooker.

Ingredients:-  ( SERVES 8-10)

  • 1.5 kg Carrot / Gajar
  • 1/2 cup Clarified butter / Desi ghee
  • 500 ml full fat Milk / Doodh
  • 1/2 cup Condensed milk
  • 1/2 cup Sugar / Cheeni
  • 1/2 tsp green Cardamom powder / Hari elaechi powder
  • Some Dry fruits- Almonds,Raisin,Cashews / Badam,Kaju,Kishmish

Method:-

  1. Peel cut top & tip of the Carrot 🥕
  2. Add washed Carrots to a pressure cooker along with 1/4 cup of Desi ghee.
  3. Sauté in Ghee for 5-6 minutes.
  4. Pressure cook for about 5 minutes or until 2-3 whistles till tender.
  5. When pressure settles down open the lid and using a masher or a big ladle mash the Carrots, So no big chunks remain.
  6. Add milk and boil stirring intermittently.
  7. Before the Milk completely dries add Condensed milk and Sugar.
  8. Continue cooking till liquid dries off 90%-100%.
  9. Add the remaining 1;4 cup Ghee along with Cardamom powder and dry fruits.
  10. Sauté Gajar Halwa in Ghee on low-medium stirring continuously for 20-25 :minutes till the Ghee oozes out and the Halwa gets shiny.
  11. Gajar Ka halwa is ready ,always serve hot.
