Ande Ki Bhurji or scrambled Eggs with lots of veggies is a very comfortable recipe that can be made in no time and is high in nutritional value.Do make and relish it any time breakfast,lunch or dinner.

Ingredients:-  ( Serves 2-3 )

  • 4-5 Eggs / Anda
  • Salt / Namak
  • 2 Onions / Pyaz
  • 1 big Tomato / Tamatar
  • 1 tsp Ginger-Garlic paste
  • 1.5 tbsp Oil / Tel
  • 1 tbsp Butter
  • 1/2 tsp Cumin / Zeera
  • 1/2 tsp Chilli paste / Hari mirch
  • 1 small Capsicum / Shimla mirch
  • 1/2 tsp Red chilli powder / Lal mirch powder
  • 1/2 tsp Coriander powder / Dhaniya
  • 1/2 tsp Garam masala
  • 1/4 tsp Turmeric

Method:-

  1. You can crack and beat the Eggs adding Salt about 1/4 teaspoon then keep it aside for a while.
  2. In a Pan heat heat Oil.In hot Oil add Cumin and let it crackle few seconds on low.
  3. Drop roughly chopped Onions and sauté over medium till golden stirring occasionally.And after adding Onions within 2-3 minutes add Ginger-Garlic paste.
  4. Next add green Chilli and chopped Capsicum.Saute on high for 1-2 minutes to keep Crispy.
  5. Now add Salt,Chilli powder,Coriander powder,Turmeric and Garam masala.
  6. Over low cook spices for 10-20 seconds.Add chopped Tomatoes,stirring occasionally over medium-high cook till Tomatoes turn soft.
  7. Now add Butter.Mux
  8. Add the beaten Eggs ,cook on low stirring continuously breaking lumps.
  9. Switch off the stove when Eggs are about 90 % done to keep it moist.

Tips :-

  • It is said 1 pinch of Salt is enough for 1 Egg.
