No Onion No Garlic  Kashmiri Rajma

Add 5 Cups of hot Water & 1.5 tsp Salt to 2 Cups of Kidney beans.Keep soaked for 5-6 hours.

Pressure cook soaked Kidney beans for 20 minutes adding  2 cups of more Water.

Step

Make spice mix with 1 tsp Turmeric, 1+1/2 tsp Kashmiri red chilli powder, 1/2 tsp ginger powder, pinch cloves powder, 1/2 tsp Fennel powder, 1 tsp coriander powder, 1/2 tsp garam masala, 1/2 tsp fenugreek powder, 1/2 tsp cinnamon powder, 1/2 tsp green cardamom powder, 1/2 tsp pepper powder, 1/4 tsp Nutmeg powder, 4 strands Mace & 1/2 tsp Caraway seeds.

In 2 tbsp hot Mustard Oil add a pinch Asafoetida, 2 Black Cardamom, 2 Bayleaves and 1 tsp Cumin.

After a few seconds add 1 tsp Ginger paste, give a stir and then add 2 chopped Tomatoes with 1/2 tsp Salt.

When Tomatoes get soft pulpy add spice mix and stir on low 30 seconds.

Add Curd & cook till it comes to boil.

Add made masala to pressure cooker, 2 cups Water & 25 gm Tamarind pulp.

Then add 1 tbsp chopped fresh Coriander.

Step

At last pour over the Rajma a tadka made with hot Desi ghee and 4 sit Chillies.

Serve with Rice/Chawal.
