Samosa a common but still tempting Street Food of India made in a different shape with special winter filling.
Ingredients:- ( Serves 9 )
DOUGH
- 2 cup Refined flour / Maida
- 1/2 tsp Salt / Namak
- 1/2 Carom / Ajwain
- 4 -5 tbsp Ghee
PASTE
- 3-4 tsp Refined flour / Maida and little Water / Pani
STUFFING
- 2 tbsp To fry Oil / Tel
- 1 tsp Cumin / Zeera
- Salt to taste / Namak swad anusar
- 1 pinch Asafoetida / Hing
- 1 tsp grated Ginger / Adrakh
- 500 gm Broccoli / Hari Gobi
- 1/4 cup Peas / Matar
- 2 medium boiled Potatoes / Aloo
- 1/2 tsp Green chilli paste / Hari mirch
- 1/2 tsp Chilli flakes / Sukha the Lal mirch
- 1 tsp Coriander powder / Dhaniya
- 1/2 tsp Turmeric / Haldi
- 1/2 tsp Chaat masala
- 1/2 tsp Garam masala
- 1/2 tsp Mango powder / Aamchur
- 1 tbsp Fresh Coriander / Dhaniya
- To fry Oil / Tel
Method:-
- In a bowl add flour.Salt,Carom seeds and Ghee.Mix very well and then gradually mixing Water make a stiff dough.About 1/2 cup Water used.
- Keep covered for 15 minutes to set.
- To make the stuffing for Samosa,in hot Oil keeping heat low add Asafoetida and Cumin.Let Cumin crackle on low for few seconds
- Now add Ginger,give it a stir and then add Broccoli florets.Saute over medium-high stirring occasionally for about 3-4 minutes.
- Next add Peas and continue sauting for another 3-4 minutes.
- Add little Water about 1/4th cup along with Salt and cook covered on low for 5 minutes to make Broccoli tender.
- After Broccoli gets tender add boiled Potato cut in small pieces.Keeping heat low also add green chilli paste,Chilli flakes,Coriander powder,Turmeric,Chaat masala,Garam masala and Mango powder.Mix and keep sauting for 2 minutes,at last add chopped fresh Coriander again giving a stir.Stuffing is ready.
- Divide dough in small portions and roll it out to a thin sheet.Cut it into a square sheet.Make slits but not upto the edge in half of the cut sheet.
- Make a paste made with Flour and Water.
- Over half of the sheet which is unslit drop made stuffing.Roll it inward applying paste on the edges to let it stick.Also apply paste on the two rolled ends to make a ring or a Donut.
- Fry these made Donut Samosa in medium hot Oil on medium till crisp and golden brown.
- Strain out over a paper towel and serve hot with green chutney or sauce.
