Here Gajar Ka halwa has been made in a very different easy way without shredding in a pressure cooker.
Ingredients:- ( SERVES 8-10)
- 1.5 kg Carrot / Gajar
- 1/2 cup Clarified butter / Desi ghee
- 500 ml full fat Milk / Doodh
- 1/2 cup Condensed milk
- 1/2 cup Sugar / Cheeni
- 1/2 tsp green Cardamom powder / Hari elaechi powder
- Some Dry fruits- Almonds,Raisin,Cashews / Badam,Kaju,Kishmish
Method:-
- Peel cut top & tip of the Carrot 🥕
- Add washed Carrots to a pressure cooker along with 1/4 cup of Desi ghee.
- Sauté in Ghee for 5-6 minutes.
- Pressure cook for about 5 minutes or until 2-3 whistles till tender.
- When pressure settles down open the lid and using a masher or a big ladle mash the Carrots, So no big chunks remain.
- Add milk and boil stirring intermittently.
- Before the Milk completely dries add Condensed milk and Sugar.
- Continue cooking till liquid dries off 90%-100%.
- Add the remaining 1;4 cup Ghee along with Cardamom powder and dry fruits.
- Sauté Gajar Halwa in Ghee on low-medium stirring continuously for 20-25 :minutes till the Ghee oozes out and the Halwa gets shiny.
- Gajar Ka halwa is ready ,always serve hot.
