Basundi is a popular traditional dessert of Gujrat and Maharashtra made usually during festive occasions.

Ingredients:- ( Serve 4 )

  • 1 Litre full fat milk
  • 1/4 cup Sugar
  • 1/4 tsp Green cardamom / Hari elachi
  • 1/4 tsp Nutmeg powdered / Jaiphal
  • 1 tbsp chopped Cashews / Kaju
  • 1 tbsp sliced Almonds / Badam
  • 1 tbsp sliced Pistachios / Pista
  • Few strands Saffron / Kesar

Method :-

  1. Roast dry fruits over low heat till change in colour and a nutty aroma.It will take 2-3 minutes.keep aside.
  2. Keep to boil Milk over medium heat preferably in a nonstick vessel till it gets 3/4 in quantity.
  3. Intermittently keep on stirring and scraping sides to mix in accumulated fat ( Malai ).
  4. When Milk gets upto 50% of what it was add Sugar,Nutmeg and Cardamom.
  5. Now continue boiling and scraping till 3/4 .add roasted Nuts,stir and switch off.
  6. Serve hot or chilled garnished with some more nuts.

Tips :

  • Preferably use non stick vessel to make Basundi because Milk tends to stick at the bottom if not stirred continuously.
  • To get thicker Basundi serve chilled in earthen pots.
  • Milk which we have used has 6% fat.
