Imriti is a popular sweet from north India.It is known as Jhangri usually in south India.Imriti looks somewhat like Jaleabi but is completely different as per the ingredients and texture is considered.To designers a Imriti can be bit difficult for beginners but as they say practice can make you perfect.

Ingredients:-  ( Serve 12 )

  • 1 cup Split Black gram / Urad dal
  • 2 cup Sugar
  • 2 tbsp Cornflour or Rice flour
  • 2 cup Water
  • 1/2 tsp Green cardamom / Hari elachi powder
  • 1 tsp Screwpine water / Kavda jal
  • 1/2 tsp Orange food colour
  • 1/2 tsp Lemon juice
  • Oil or ghee for frying

Method:-

  1. Rinse urad dal couple of times and then keep it soaked for 4-5 hours in 1 cup Water.
  2. Grind into fine thick paste adding couple of teaspoons of water if required
  3. Add 1/4 teaspoons food colour and cornflour into the made urad dal paste
  4. Beat the mix for 5-7 min to incorporate air.
  5. Fill the urad batter in a piping bag.
  6. Make a sticky sugar syrup with sugar adding 1 cup Water.
  7. To this syrup add 1/4 tsp or pinch of orange food colour,elachi powder,kavda Jal and lemon juice.
  8. Pipe Imriti in medium hot Oil and fry them crispy flipping in between over low.
  9. Strain and then drop Imriti in warm Sugar syrup.Keep for atleast 10 minutes and then strain out.
  10. Serve warm.

Tips :

  • Don’t keep too much Oil for frying,otherwise your Imriti will keep on floating while you are still piping them.( This will make difficult for you to pipe them )
  • Use a wide flat open mouthed vessel for frying.
