Kathi roll the name comes from kathi that means stick in Bengali is a famous and popular street food. These kathi rolls are known as frankie in southern region of India.it wont be wrong if we call it Indian sandwich.
Ingredients :- ( Serves 4 )
- 2 cup Refined flour / Maida
- Salt to taste
- 2 Eggs
- Oil
- 1 chilli
- Onion
- 1 small Capsicum
- Tomato sauce
- 5-7 Cottage cheese / Paneer pieces
- 2 boiled Potatoes
- 1/4 tsp Turmeric / Haldi
- 1/4 tsp Mango powder / Amchur
- 1/4 tsp Pepper / Kali mirch
- Coriander leaves / Dhaniya
- 1/4 tsp Garam masala
- Chilli sauce
- Chaat masala
Method:-
- Knead the flour adding a tablespoon Oil,Salt and required amount of Water into a soft dough.
- Let this to set for about 15-20 min.
- Then divide dough into four equal portions or balls.
- Roll out one ball into a roti add and spread a teaspoon of oil over it.Roll it oblong,again apply little Oil,again roll like a wheel and tuck the extra portion inside.( This will give nice layers to our paratha ).
- Now roll this out again into a paratha.
- Drop over a hot griddle / tawa to roast.Apply a teaspoon of Oil on both sides.
- Meanwhile whisk eggs adding salt.
- Remove the paratha a little undone on one side.
- Heat 2 teaspoon of Oil in this add finely chopped green Chilli.one Onion and Capsicum.
- Sauté for couple of minutes then drop whisked egg.Then immediately over it place the half done side of paratha.
- After you see your egg is cooked flip the paratha and within a minute remove.
- Apply little Tomato sauce over the egg as per your taste sprinkling thin slices of Onion.Roll and your frankie or kathi roll is ready.
- For veg filling take a tablespoon of Oil in hot Oil add thin long pieces of Paneer.
- Shallow fry till golden and then take it out.Now to this Oil add one medium finely chopped Onion and sauté till translucent.
- Next add Potatoes in it add Salt,Mango powder and Pepper.
- Then add and mix fried Paneer pieces.
- Now add a tablespoon of Coriander leaves & Garam masala.Mix litely and filling is ready.
- Spread this filling over anothe4 made paratha adding some thinly sliced Onion rings,Tomato sauce,chilli sauce,chaat masala ad Coriander leaves.
- Roll and serve it wrapped in a thin paper or tissue.
