Be any function wedding,marriage or festive occasion this Kaju katli always finds a place for itself.Most easy to make and considered as a royal burfi.

Ingredients :- ( Serves 28 )

  • 250 gm Cashews / Kaju
  • 5 tbsp Milk powder
  • 1/2 tsp Green cardamom / Hari elachi
  • 3/4 cup or 150 gm Sugar
  • 1/3 cup or 70 ml Water
  • 1 tsp Ghee
  • 8-9 Silver warq

Method:-

  1. Grind Kaju into fine powder or flour.
  2. To this Cashew flour add Milk powder and Cardamom.Mix
  3. Now in a pan add Sugar and Water.
  4. Let the Sugar melt in water over low .
  5. After Sugar melts put heat over medium and boil till you get 2 thread consistency.
  6. Next add the cashew flour mix immediately removing from heat to avoid release of fat from Cashews flour by  heat.
  7. We arrived to a paste like consistency and let this dry for 5-7 minutes.
  8. After that it will dry come together as a dough.
  9. Now over a plastic sheet or wrap apply ghee,over this drop the Kaju katli dough.
  10. Knead it using the plastic wrap till smooth and then roll it out in 1 cm thick sheet.
  11. Apply silver warq and let this to dry for an hour.
  12. Cut with a sharp knife in diamond shape and serve to enjoy.

Tips :-

  • Grind the Kaju’s in batches so that all Kaju’s grind properly without taking much time.
  • It will take you hardly one or two pulses to grind handful of cashews.
  • Over churning might release fat from Cashews that we don’t want.
  • While kneading heat of hand touch might make Kaju katli Black thus use a plastic wrap.
  • Refrigerate & store for 15 days.
