Puran Poli is a Indian sweet roti like recipe made usually during festive occasions like Ganesh Chaturthi or Diwali.although it’s popularly known as a Maharashtrian recipe but it’s also made and known by different names in different regions pf India like Gujrati,karela,Goa,Andhra Pradesh and Tamil Nadu.
Ingredients :- ( Serves 8 )
- 1 cup split Bengal gram / Tuta chana
- 1 cup Wheat flour / Atta
- 1 cup Refined flour / Maida
- 1/2 tsp Salt
- 1/4 tsp Turmeric / Haldi
- 4 tbsp Vegetable Oil / Dalda ghee
- 3 tsp Clarified butter / Desi ghee
- 1/4 tsp Nutmeg / Jaiphal
- 1/2 tsp Green cardamom powder
- 1/4 tsp Dry Ginger powder / Saunth
- 2 tbsp Almonds powder
- 1 cup Jaggery / Gud
Method:-
- After rinsing Channa soak it in 1 cup of water for 2 hours.
- Next adding a little more than 1/2 cup or 130 ml of water pressure cook the Dal for 7 whistles.
- Meanwhile for making Poli to a bowl add Wheat flour,Refined flour,Salt,Turmeric and Vegetable Oil.
- Mix all the ingredients till the flour turns flaky.
- Now knead the flour into a soft dough using 1 cup of Water.
- Keep the dough covered. and let the dough set for an hour.
- Now grind the dal into a thick paste adding 1/4 cup of Water.
- Add to a vessel Desi ghee,Nutmeg,Cardamom,Ginger powder and Almond powder.Roast these over low heat for a minute.
- Then add the made Dal paste and over it add Jaggery..Keep in cooking over medium stirring continuously till the Dal forms dough like consistency,it will take you about 5-7 minutes for this.
- After an hour our dough is soft and set.
- Pinch out equal big lemon size balls.
- Make same number of balls from the Dal dough but a bit smaller than the flour dough balls.
- Now stuff the flour dough balls with the Dal balls and roll out into a thin roti dusting with dry flour in between when required.
- Drop your Puran Poli over a hot Griddle/Tawa and roast over a medium heat flipping in between until you see brown spots on both sides.
- Apply a teaspoons Ghee on each side.
- Serve hot with butter or curd.
Tips :-
- In the flour instead of Vegetable Oil you can add Clarified butter.
- Punch the dough for couple of minutes to make it soft.
- Instead of Jaggery you can also use same quantity Sugar.
- After adding Jaggery Dal will turn more liquidy but eventually it will become thick.
- Patch your Puran Poli With little dough dusting flour over it if it breaks in between.
- If you want your Puran Poli to puff up roast it for longer time on one side than other
- Applying a little pressure over your roti also helps it to puff up.
