Sweet Boondis are usually made as Prasad offered during pujas though it can be eaten anytime.These Boodis when come together form the famous Boondi Ladoo.

Ingredients :-

BATTER

  • 1 Cup Gram flour / Besan
  • 1/2 cup + 1 tsp Water
  • 2 tsp Oil

SUGAR SYRUP

  • 1 cup Sugar
  • 1 cup Water
  • 1 tbsp Lemon juice
  • 1/2 tsp Cardamom powder / Elachi
  • A pinch Orange colour or 2 strands of Saffron / Kesar
  • Ghee or Oil for frying
  • 1/4 cup Cashews / Kaju
  • 1/4 cup Melon seeds / Maghaz

Method:-

  1. Make the Besan batter adding Water that is neither too thick nor too thin.It should have dropping consistency.
  2. Add Oil,
  3. Add Water to Sugar and let Sugar to melt over low.
  4. After sugar melts let the syrup boil for a minute adding lemon juice,Cardamom powder and orange colour or Saffron.
  5. Sugar syrup is sticky it’s perfect to put off stove.
  6. Heat Oil or Ghee.
  7. Drop the batter from a small perforated ladle.
  8. Fry dropped Boondi just for 30 seconds over medium heat.
  9. Strain them out and drop immediately in sugar syrup.
  10. Add broken Cashews and Melon seeds.
  11. Mix and keep aside for 6-8 hrs stirring in between.
  12. Boondis become double absorbing the sugar syrup.

Tips :-

  • If the batter is too thick Boondi will form with a tail and if batter is too thin Boondi will come out flat.
  • If the Boondi floats up in hot Oil and is round it’s perfect to fry.
  • Don’t move ladle up and down to drop the batter let it flow down itself.
  • Clean your ladle after dropping each batch of Boondi.
