Vada pav is a famous Mumbai street food.

Ingredients:- ( Serve 6 )

FOR VADA

* 1/2 tsp Mustard seeds / Rai
* 1/2 tsp Cumin seeds / Zeera
* 1-2 Green chillies / Mirch
* 8 Curry leaves
* A pinch Asafoetida / Hing
* 1 tbsp Oil
* 1/2 tsp Ginger & Garlic paste each
* 3 Boiled Potatoes / Aloo
* 1/2 tsp Turmeric / Haldi
* Salt to taste
* 2 tsp Lemon juice
* 1 tbsp Coriander/ Dhaniya

FOR BATTER

* 1 cup Gram flour / Besan
* Salt to taste
* 1/4 tsp Turmeric/ Haldi
* 1/2 Red chilli powder / Lal mirch
* A pinch Baking soda

Oil for frying

Method:-

1. Heat Oil and add to it Mustard seeds and Cumin seeds.Let it to crackle.
2. Then add to it Curry leaves and chopped Green chillies,stir it.
3. Within few seconds of adding these add Garlic & Ginger paste along with mashed boiled Potatoes,Salt & Turmeric.
4. Sauté this for 2-3 minutes and then add Lime juice and chopped Coriander.
5. Keep on sauting on medium heat for couple of minutes more and it’s ready.Let it to come to a room temperature.
6. Now mix Gram flour,Salt,Turmeric,Red chilli powder and Baking soda to make a batter by adding Water little at a time.The batter should be free of lumps,neither too thick nor too thin.
7. Let’s now make balls out of our Potato mix and then by dipping them in the batter completely coat it with the made batter.
8. Then fry these coated balls in hot Oil till golden brown.
9. Sandwich these fried balls in between a slit bun with green and red chutney .

Tips:-

– You can roast the bun in butter for more flavour.
